Teaching children about healthy eating is a passion of mine. Through my experiences working with youth in local elementary schools, the Washington Youth Garden at the U.S. National Arboretum and homeschool groups, I have discovered that the best way to teach our children about healthy eating is by getting them in the garden and the kitchen. When you involved children in the process of growing and cooking their food, they are jazzed to eat the fruits of their labor! I’ve seen children eat three helpings of ratatouille because they took ownership of the process required to get those yummy, nutritious veggies on their plates.
